Greek Turkey Burgers

007One of my favorite things about summer is the food. (To be fair, one of my favorite things about life is the food.) I love the watermelon, pasta salads, coleslaws, grilled asparagus, stuffed burgers, brats, and corn on the cob that comes with warm, sunny days and meals with friends at the cottage or campground. I have little no restraint when it comes to BBQ’s, and honestly, no shame filling my plate multiple times, so it can be nice to throw in a healthier option to the mix once in a while too.
Here’s one of my go-to healthy grilling options that is super easy and flavorful:

Greek Turkey Burgers
1 lb ground turkey (chicken is great too)
juice of 1/2 Lemon
1/2 tsp Oregano
1/2 tsp Basil
1 garlic clove, minced
1.2 C Feta
dash of S & P

These burgers are great without a bun too. Instead, make a tzatziki dip and top with sliced cucumber and tomato.

Tzatziki:
1 cup plain greek yogurt
1/2 cucumber, chopped
Juice of 1/2 lemon
1 garlic clove, minced
1 tbsp. dill
S & P, to taste

Pair it with grape leaves, caprese salad and stuffed olives, or naan and hummus.
If you have leftover tzatziki dip, a great lunch option is a stuffed pita with grilled chicken, tzatziki, sliced cucumber, tomato, and red onion.
